It was obvious that some of the recipes weren't tested by the author or staff. Many instructions are "no-sense" and some instructions just jump around.
If you were trying recipes that were tested and looked over, it probably should work, because she obviously knows how to make cheeses.
But if you happened to pick something that wasn't tested, you are taking a risk...but how would you know which ones are "safe" to try?
One of the recipes was "Kefir Cheese". It states that Home-Made kefir is best. Well, I make kefir at home, and I had tried making cheese the same way as an experiment of my own (before reading this book). If you follow the directions, your will have to be so special that the "tongue piercing" acidic glob won't bother you in order to eat that. Also, some instructions miss some steps, or jump around. She probably could make cheesees with no problem with missing or jumping around instructions, but knowing how to make and explaining how to make are 2 different things.
I am glad I checked this out from the library, and read carefully.

Rikki Carroll's Book on Cheese Making is an Excellent Book for your Cheese Making Reference Library and our First one for ours. We have had great Success making many types of Cheeses, and have gotten emails when we got stuck on one of the easy ones. We do know one thing Cheese Making recipes are a Guide that you can experiment with as you learn more, and appreciate the Wisdom that Rikki Carroll has shared with the World to use. We raise a few Jersey Cows and Use the fresh milk for our Cheese Making , so we have an advantage to making great tasting Cheeses . This Book was a great beginner book for us . Checked it out of the library first and immediately knew we would order it as soon as we returned home, by just thumbing through it. Rikki , you are welcome at our Farmstead Home anytime, Thank you!

This is a great book for the beginner, and intermediate cheese maker. It explains the basic science behind cheese making, walks through the required equipment and the techniques for making cheese. The second part of the book offers great recipes for most types of cheese.

What a great book!!! Very easy to read, gives all the setup and equipment requirements needed as well as great recipes, those for the beginners and experienced as well. Love the little stories through it concerning how ordinary people have started their cheese making journeys. Would highly recommend.
